Pullman bread or loaf, typically sliced for a sandwich, is a type of bread made with white flour. The Pullman dough is baked in a long and narrow pan. A lid is usually used to restrict the rise and give the bread its signature cube shape. The French term used to describe this loaf is pain de mie.

Washing the cube pullman tins
To wash your uncoated tin for the first time, hand wash in hot and soapy water. If you are able to, dry them in a cooling oven. Alternatively, pat the tins dry with a towel. Once the tins are dried, grease them. Continue to grease, before each bake, until a protective coating begins to build up.
It’s typical not to wash the pans, between each bake, to avoid dough sticking to the edges of the tins.
Dishwasher chemicals will likely damage the surfaces of the tins.
