It’s a joy to share with you a part of my sourdough starter. I’ve got my starter since the beginning of my sourdough journey, October 2019. It gave me hundreds, if not thousands of delicious bakes and I hope it will do the same for you
The good news is that the sourdough starter can last forever, as long as you take good care of it and of course, you don’t use all of it 🙂
Now that you’ve got the starter, here is what you’ve got to do
First things first, transfer the starter from the pouch to a jar and store it in the fridge until you’re ready to make your first loaf.
Roughly 8-9h before preparing the dough:
- Remove the jar from the fridge
- Keep 15g starter, remove/discard the rest. To the 15g starter you add 60g water and 60g flour. Stir well until there is no dry flour left, put the lid back on, but make it sure it’s loose. Leave the starter on the counter for 8-9h
- 8-9h later, take 100g of the starter to mix it in the dough, whatever is left in the jar now goes back in the fridge
Next time you want to prepare bread, you just repeat the above. It’s that easy.
[TIP] If you want to start preparing the dough in the morning, it is best to feed the starter the night before, last thing before going to bed. If you plan on making the dough in the afternoon, you can feed the starter first thing in the morning
