  • 150g ricotta cheese
  • 100ml double cream
  • 50g roasted pine nuts
  • 1 small red chilli, finely chopped (adjust to taste)
  • A handful of fresh rocket leaves
  • Olive oil (for cooking)
  • Salt and pepper to taste

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add your pasta and cook until al dente. Drain, reserving a little pasta water.
  2. Prepare the Sauce: While the pasta cooks, heat a tablespoon of olive oil in a large frying pan over medium heat. Add the chopped sunblushed tomatoes and sauté for 2-3 minutes, allowing them to release their flavours.
