Plastic Bannetons
Preparation of new or washed proofing baskets.
First use:
To avoid dough sticking to your new plastic proofing basket, you need to first apply a flour coating. Here are the steps to follow to do this.
- Using water, spray mist the inside of the proofing basket lightly and evenly with water. Do not over saturate and avoid too much.
- Use rye flour and potato starch to dust the inside of the basket. Make sure you coat the whole surface and leave no gaps. To achieve this, sprinkle the flour in the basket, in circular motions.
- After 5 minutes, dust your basket again. Gently empty out any surplus flour still left in the basket.
- You have now created a thin and even coat for your banneton. Lightly dust before each dough proof.

Cane Bannetons
Preparation of new or washed proofing baskets.
Follow this guide to avoid mould in your new cane banneton. Mould can develop first in the flour layer of a banneton. In turn, this leads to discolouration of the cane banneton.
Before First Use
- Mist spray a thin layer of water-free release agent on your new proofing baskets and flour them as usual.
General Use
- Tap the proofing baskets gently before each use to shake out debris from the banneton.
- Do not stack the bannetons when humid. Instead, let them air dry.
Cleaning
- Clean the cane banneton every 3 – 4 weeks with a rigid brush or cleaning machine (do not assist with water). You
can also put them in the dish washer. - Place the bannetons into the oven at 120 – 130˚C (250 – 270˚F) with plenty of water vapour for about 20 minutes. If you have put them in the dishwasher, do not use any water vapour.
- Clean the baskets every 6 months (or more often if necessary) thoroughly with clear water and let them dry in the oven. After the drying process, spray on a new light coating of water-free release agent.

Professional Banneton Cleaning
For dry cleaning, a special brush can be used in combination with a stirring machine. This is commonly supported with a dust collector. This enables you to clean a large of bannetons fast and thoroughly.
