How do bannetons help you bake?
Cane bannetons help to draw moisture from the dough surface and cause a dry outer skin. This in turn avoids sticky dough from bonding to the basket. Furthermore, proofed dough is easier to turn out, whilst ensuring the dough stays inflated. The dry dough skin also helps to hold shape when you come to score.
Grooves and impressions can help decorate your loaf surface.
Typically, these woven baskets are lined with linen cloth but can be used alone.
