What does T65 mean?
The T number is a French flour rating used to indicate coarseness. The rating scale is made up of T45 (very fine), T55, T65, and T150 (very coarse).
T65 flour is similar to that of Italian Type 1. This type of flour is high in protein and great for baking bread.
