Usage guide for the Spring Oven

Without the need for additional water pots or pans, the Spring Oven enables its user to steam bread in their home oven. The product’s base has a channel that can be filled with water to form a reservoir that will produce steam while it bakes, enabling your bread to achieve its maximum potential. Rather cleverly, the sloped lid will catch and trickle the steam back as it rises within.

Pre-use

It’s advised to soak the base and the lid in water for 30 minutes after receiving The Spring Oven, then wipe them down and let them air dry completely. This helps to prepare the terracotta before your initial bake.

You might notice some dough adhering to the base of the Spring Oven during the first few bakes. This is typical, and after a few more bakes, the terracotta will have built up an oily non-stick coat from some food oils. However, there are a few things you can do to speed up the process if you wish. Simply, rub a little olive oil over the foundation and let it soak in for an hour before baking. If your base is glazed, you can skip this step. I would always advise dusting the base with flour before placing your dough to avoid sticking while baking. For this, plain flour or rice flour works well.

Baking with the Spring Oven

Pre-heat your oven to 230°C after you have all of your dough made. 150ml of warm water should be carefully poured into the channel that surrounds the base, being careful to prevent water from splashing onto the base. Place The Spring Oven in your preheated oven with the cover on for 15 minutes. After 15 minutes, remove The Spring Oven with care while wearing gloves. After that, place the dough on the foundation and score the dough’s top. Put the Spring Oven’s cover back on and carefully re-enter it into your home oven for 15 minutes at 220°C.

Remove The Spring Oven‘s lid after 15 minutes and bake the bread on the base alone for an additional 30 minutes (or until golden brown). Lower the temperature to 210°C during this stage.

Care

Dishwasher use is not recommended for the Spring Oven. Only wash your hands with hot water.

Prior to washing, make sure the terracotta has had time to cool. It’s crucial to avoid submerging the product in hot dishwater because it will cause the terracotta to cool down too quickly and may shatter from thermal shock.

After baking, the terracotta retains its heat for a while, so use caution while handling it without oven mitts.

Due to its high firing temperature, the product is robust and long-lasting. Terracotta can chip, though, so be careful when storing it.

The Spring Oven should not be used on a cooktop or hob. Terracotta will crack under direct heat. Use The Spring Oven exclusively in the oven at home.
